辛味成分はジンゲロール(gingerol: CAS 23513-14-6)、ショウガオール(shogaol: CAS 555-66-8)とその分解物。それに対して、白ウコンとも呼ばれるハナショウガは非常に苦く、精油中の8,9割をゼルンボン(zerumbone: CAS 471-05-6)が占める。(ウコンとは別属。)
